These muffins, are delicious and loaded with fiber and heart ~ friendly oat bran. 


Canola oil for oiling the muffin pan
2 large green cooking apples, Granny Smith or Graven stein apples are my favorite.
2 T. lemon juice
2 cups whole ~ wheat pastry flour
1 cup unbleached white flour
1¼ cups oat bran
2½ tsp. baking soda
1 tsp. cinnamon
½ tsp. nutmeg
1 ~ 12 ~ ounce can apple juice concentrate, thawed
1 cup water
Heat oven to 325°. Lightly oil muffin pan. Peel and core apples; chop apples coarsely. In a bowl stir apples and lemon juice together, set aside.
In a mixing bowl, stir together whole wheat flour, white flour, oat bran, baking soda, cinnamon, and nutmeg.
Add thawed apple-juice concentrate, chopped apples, and enough water to make a light batter.
Mix just enough to moisten all ingredients. Divide batter among the muffin cups { each muffin cup should be about ¾ full } and bake till a toothpick comes out clean, 25 ~ 30 minutes.
Remove muffins from cups while hot.
