1/2 cup onion, diced
1/4 cup melted butter
1 can cream corn
5 cups corn chips
1/2 cup chicken stock
4 chicken breasts
1/2 cup milk
1 (10 3/4 oz.) jar of chili cheese dip
Sauté onions in butter. Add corn,
corn chips and chicken stock and heat well. Spoon corn chip mixture down the center of a
3 ~ quart baking dish, leaving space on both sides for chicken. Arrange chicken on each side of
corn chip mixture.
Mix
chili cheese dip and milk and pour over chicken. Cover and bake at 400° for
30 minutes, uncover and bake for 10 minutes more or until chicken is done
well done.
Serves 4, easily doubled.
