2 lbs of white and dark chicken meat mix cut into 1
& 1 1/2
inch pieces 1 cup zesty Italian salad dressing 1 medium sweet onion 1 each ~ red, yellow and green pepper 1 small zucchini 1 pound small fresh mushrooms 6 bamboo skewers { soaked in water for 30 minutes prior to use. } Wash and cut
chicken in to 1 & 1/2 inch pieces. Marinate the chicken in the zesty
Italian salad dressing in the refrigerator for 1 to 3 hours. Wash and cut
vegetable and cut into 1 & 1/2 inch pieces. Alternate
Chicken and veggies onto skewers. Heat grill to medium low to medium heat.
Place skewers on grill and cook for 20 to 25 minutes turning about every 5
minutes or as needed. Cooking until chicken is done. Makes 6 to 7 skewers |
