Mandarin Pork Roast Recipe

   

1 ~ 5 lb. pork loin roast
2 tsp. dried rosemary, crushed
4 garlic cloves, minced
salt & pepper to taste 
1 can { 11 oz. } mandarin oranges, drained
Glaze
½ cup orange marmalade jam
6 T. orange juice concentrate
¼ cup soy sauce 
¼ cup ketchup
2 T. honey
2 ¼ tsp. dry ground mustard
1 ½ tsp. ground ginger
2 garlic cloves, minced
In a small bowl, combine rosemary, garlic, salt and pepper; rub over roast. Place roast, fat side up, on a rack in a shallow roasting pan. Bake covered with foil at 350º for 45 minutes, uncover and bake for 1 hour longer. Arrange oranges over roast. 
Combine glaze ingredients: brush gently over roast. Bake 30 minutes longer or until a meat thermometer reads 160º ~ 170º, brushing often with glaze.
Let stand 10 minutes before slicing.
