2 Lbs. fresh salmon fillet ~
ground ~
1 cup onion ~ chopped
1 cup celery ~ chopped
2 eggs
½ cup cracker crumbs
½ cup milk
1 tsp. lemon
1 tsp. dill
salt & pepper to taste

1 cup mayonnaise
1 T. dill
1 tsp. lemon

Start with a large boneless salmon fillet. { about 2 lbs. } Remove skin
and bones, grind with a meat grinder. In a medium bowl, combine ground salmon, chopped onion, chopped celery,
eggs, cracker crumbs, milk, lemon, dill, salt and pepper. Mix well. Place in a
well greased 8 x 4 loaf
pan or a 8 x 8 square pan forming salmon into a loaf shape.
Mix mayonnaise, dill and lemon together
and spread over the top of salmon loaf.
Bake at 350° for 50 to 60 minutes or until golden brown. { A knife
inserted into the center should come out clean }. Remove from the oven and let set for 5
minutes. Loosen edges and lift out of the pan. To serve, cut into slices. Serves
