1 ~ medium head ~ cauliflower broken into 1 to 2 inch pieces
1 cup sour cream
1 cup shredded cheddar cheese
½ cup crushed corn flakes
¼ cup green bell pepper, chopped
¼ cup sweet red bell pepper, chopped
¼ cup grated parmesan cheese 
¼ tsp. salt or to taste 
½ tsp. paprika or to taste
Place cauliflower in a saucepan or in a microwavable dish with ½ cup of water. Cover, bring to a boil and cook for five minutes or until crisp but tender, drain.
Combine cooked cauliflower, sour cream, cheddar cheese, corn flakes, bell peppers and salt. Transfer to a 2 ~ quart baking dish sprayed with non-fat cooking spray. Sprinkle with parmesan cheese & paprika. Bake uncovered at 325º for 30 to 40 minutes or until heated thru and golden brown. Serves 6
