1 can { 10 3/4 oz. } tomato soup
1/2 cup vegetable or olive oil
2 tbsp. red vinegar
1 tbsp. soy sauce
1/2 tsp. ground ginger
1/4 tsp. garlic powder or 1 tbsp. minced garlic
4 boneless chicken breast halves
8 cups salad greens torn in bite ~ size pieces
1 can { 11 oz. } mandarin orange segments, drained
3 green onions, sliced or1 cup thinly sliced red onion
Directions:
Mix soup, oil,
vinegar, soy sauce, ginger and garlic powder.
Reserve about 1 1/4 cups soup mixture for dressing.
Grill chicken 15 min.
or until done, turning and brushing often with the remaining 1/2 cup soup
mixture. Discard remaining soup mixture. Cut chicken into thin strips.
Arrange salad greens,
mandarin oranges and onions on a salad plate. Top with chicken and drizzle
with reserved soup mixture. Serves 4.
