2 or 3 ripe avocados
2 tablespoons lime juice
salt & pepper
olive oil
1/2 cup chunky salsa ~ medium to hot
1/2 to 1 cup pepper jack cheese
black olives ~ sliced
4 to 6 green onions
Pick out nice ripe
avocados. Pre heat grill to medium low heat, brush grill with olive
oil.
Slice avocados in
half and remove the seed. Rub the lime juice on the meat of the
avocado's and place meat down onto the grill for 5 minutes, along with
the green onions. Gently turn avocados upright. Sprinkle with salt &
pepper, add 1 or 2 tablespoons of the salsa in the center of each
avocado, top with the cheese and olives. Cook 5 minutes longer or until
hot clear through. Remove from grill and serve hot. Serves 4 to 6. |
