12 ounces dry, uncooked penne pasta
1 pound lean ground beef or ground turkey
1 large onion, chopped
1 ~ 14 ~ 1/2 ounce can diced tomatoes with basil, garlic and oregano
1 ~ 6 ounces can  tomato paste
1/2 cup water
3 cups shredded mozzarella cheese, divided
non stick cooking spray

Cook pasta according to package directions; drain and keep warm.
Meanwhile, preheat oven to 350°.
Cook ground beef and onion in a large skillet about 8 minutes or until beef is crumbled, browned and no longer pink; drain off fat. Stir in diced tomatoes, tomato paste, and water. Season with salt & pepper to taste; heat through.
Coat a 13 x 9 x 2  inch baking dish with cooking spray. Combine cooked pasta with meat ~ tomato mixture, and 2 cups mozzarella cheese. Pour into baking dish; top evenly with remaining cheese.
Bake uncovered at 350° for 20 to 25 minutes or until heated through and cheese is melted. Serves 6
