Roasted Turkey Pan Gravy
Remove the turkey drippings ~ fat and
juices from roasted turkey into a bowl
1/4 cup all ~ purpose flour
2 cups liquid turkey or chicken broth
1/2 teaspoon salt
1/2 teaspoon pepper Pour drippings
from roasting pan into bowl, leaving brown particles in pan. Spoon off
excess fat off the top the the drippings broth. Return 1 cup drippings to
roasting pan. Whisk in flour. Measure accurately so gravy is not lumpy. Cook over medium
heat, stirring constantly with a wire whisk, until mixture is smooth and
bubbly; stir in liquid chicken or turkey broth. Heat to boiling, stirring
constantly. Boil and stir 1 or 2 minute. Stir in salt and
pepper. makes about 5 servings. Easily doubled by adding 2 more cups of
broth and add 1/4 cup flour.
