1 large box { 8 serving size } lime jell ~ o or sugar free lime jell ~ o
2 cups boiling water
2 cups ice cold water
1/2 cup grated raw carrots
1/2 finely chopped raw celery
1/2 cup golden raisins ~ optional
1 cup shredded raw cabbage
1/2 cup mayonnaise with
2 drops of green food coloring ~ optional
Completely dissolve gelatin in boiling water. Combine cold water and 5 ice cubes to make 2 cups ice water. Add cold water into hot jell ~ o. Remove any un ~ melted ice. In a 2 quart, square or rectangle dish, layer the carrots, then celery, then raisins and last the cabbage.
Pour jell ~ o over layered vegetables, juggle the dish a little so the jell ~ o goes down into the vegetables. Chill until set ~ about 1 hour. When set spread mayonnaise thinly over the top of jell~ o or dab 1/2 tablespoon on top of each serving. Serves 6.
Additional Combinations: Along with the sliced carrots and celery; use chopped cucumber and chopped green onion; or drained mandarin orange sections and chopped apple; or green pepper and sliced ripe or green pitted olives.
