Easy Corned Beef
Hash Recipe
1 ~ 12 ounce canned
corned beef
6 large russet potatoes
1 small onion ~ chopped
2 tablespoons olive oil or vegetable oil
salt & pepper to taste
Leaving skins on the russet potatoes, wash add cut into 1/2 inch chunks. In a large skillet
heat oil on medium heat. When oil is hot carefully add potatoes. Let
cook a minute then turn potatoes. Add onions, salt & pepper, cover
with a lid for 1 or 2 minutes turning potatoes. Cook and turning
potatoes again to keep from burning. When the potatoes are cooked
tender add corned beef.
Open corned
beef and break up into small chucks, add corned beef to potato
mixture.
Cook and turning once more or until corned beef is heated through.
Serve with over easy eggs and toast. |
