Oven Baked Trout Recipe
"Nothing beats fresh fish, especially when it is baked on a layer of
fresh veggies. The fresh flavors of this dish will leave your mouth
begging for more."
one large trout about one pound, cleaned and head removed
1/2 sweet onion, minced
2 tablespoons chopped fresh dill
2 teaspoons grated lemon zest
1 clove garlic, minced
1/4 cup olive oil, divided
salt and pepper to taste
1 pound fresh baby spinach leafs
2 or 3 large carrots thinly sliced
Preheat oven
to 350 degrees. Line a baking sheet
with parchment paper sprayed with cooking spray. Aluminum foil
sprayed with a cooking spray will work just a well. Spread spinach
leafs on parchment and then layer the carrots over spinach.
Toss onion,
dill, lemon zest, garlic, and half of the olive oil. Season with
salt and pepper to taste. Press onion mixture into the trout, then
brush the trout with the remaining olive oil, and season with salt
and pepper. Place trout on the layer of prepared veggies
baking sheet.
Bake in the
preheated oven until the skin of the fish begins to brown, and the
flesh flakes easily with a fork, about 30 minutes. |
