Ask your butcher to butterfly cut your leg of lamb.
Use a meat thermometer to keep from over cooking the leg of lamb.
You can also use this great marinate on a pork shoulder roast. |
Easy Recipe Grilled Herbed Leg Of Lamb
Fresh mint, rosemary and garlic creates a succulent grilled leg of
lamb with distinctive aroma.
1/4 cup olive oil
2 tablespoons chopped fresh rosemary leaves
2 tablespoons chopped fresh mint
2 tablespoons soy sauce
4 garlic cloves, minced or 2 tablespoon minced garlic
1 - 5 pound butterflied boneless leg of lamb
In small bowl, combine all ingredients except lamb; mix well.
Place lamb in nonmetal baking dish. Rub both sides of lamb with
herb mixture. Let stand 10 minutes at room temperature.
Heat half of
the gas grill to medium heat or place charcoal along
one side of charcoal grill and heat coals until hot. When ready to
grill, place lamb on heated side of grill. Cook 4 to 6 minutes or
until seared on both sides, turning once.
Transfer lamb to unheated side of grill. Cook 30 to 40 minutes
or until of desired doneness, turning occasionally. Let the leg of lamb stand
10 minutes. Cut into thin slices diagonally across grain.
