Artichoke & Mushroom Pasta Sauce   Oven Temp. ~300º Baking Time ~ Pan size ~ medium skillet Servings ~ 4 to 6   GLENDA'S Helpful Kitchen Hints ~~~~~~~~~~~ This is a great sauce for pasta, chicken and even mashed potatoes. Artichoke and Mushroom Pasta Sauce 1-1 pound package of spaghetti cooked according to the package directions 3 tablespoons butter 3 tablespoons olive oil 2 tablespoons chopped herbs { basil, dill, cilantro } 12 ounce jar artichoke hearts, drained and cut into fourths 1 small yellow onion, diced fine 8 ounces white mushrooms, washed and drained 1 lemon 3/4 cup white wine, Chablis 3/4 cup chicken stock 1 cup Romano cheese, grated salt and black pepper Directions Heat the olive oil and the butter over medium heat. Add the onions, chopped herbs, and the quartered artichokes, cook for 2 minutes. Add the mushrooms, squeeze the juice from the lemon over the skillet, add the wine and the chicken stock. Simmer together for five minutes. Add in the cheese and season to taste with salt and pepper, add the cooked spaghetti and toss together. Serve immediately.
