Southwestern Creamy Chicken Soup
Recipe
1 tablespoon margarine
1 medium onion - chopped
3 stocks celery - sliced 1/2 long
4 boneless skinless chicken breast halves - cut into 1/4 inch strips
1/4 cup all - purpose flour
1/2 teaspoon salt and pepper or to taste
1 can evaporated milk
3 cups chicken broth
2 tablespoon chopped fresh cilantro
2 tablespoons hot sauce - more or less to taste - optional
2 - 15 ounce caned stewed tomatoes
1 - 15 ounce cans cream style corn
2 - 4 1/2 ounce can chopped green chilies
2 ounce jar chopped pimiento

Melt margarine in nonstick a Dutch oven or large saucepan over medium heat.
Add onion and celery, cook and stir 2 minutes. Add chicken ; cook and stir 3 minutes, cover; cook 5 minutes or until chicken is no longer pink and onion and celery is tender.
Stir in flour and salt until well blended. Gradually add caned milk and
chicken broth,
cooking and stirring over medium high heat until thickened and bubbly.
Add all remaining ingredients; cook until thoroughly heated. Simmer
for 10 minutes stirring occasionally to keep from scorching. Serve
hot. Garnish with salad croutons.
