You can substitute dried craisins or dried currents for the raisins.
For fewer calories use low fat mayonnaise.

Apple Broccoli Waldorf Salad

6 cups broccoli flowerets { that is the tops of the broccoli }
3 medium granny smith apples, sliced, cored, cut into bite size pieces
3 medium Jonagold apples, sliced, cored, and cut into bite size pieces
1 small red onion, sliced thinly
1 1/2 cups chopped almond's
1/2 cup raisins
2 cups mayonnaise
1/2 teaspoon sugar
1 tablespoon lemon juice


In a small mixing bowl, combine red onion, almond's, raisins, sugar and mayonnaise. Set aside in the refrigerator. To save time you can make the mayonnaise mixture the night before, omitting the onions.

In a large bowl, combine apples and lemon juice. Stir until apples are well coated with lemon juice, add apples and lemon juice to mayonnaise mixture. Refrigerate for 1 hour to blend flavors. Stir in broccoli. Serve in a nice serving bowl. Serves 6 to 8. Easily doubled.
