Use fresh asparagus spears. Wash
spears, then brake of the bottom end of each
spear. Steam in boiling water for 7 to 10 minutes or until very
tender. Cool completely. |
EASY ASPARAGUS SALAD MEDLEY
1 can { 15 ounce } Asparagus Spears, drained
1 cup red and yellow cherry tomatoes, halved
1 can
{ 15 ounce } Small White Beans, drained
1/2 cup diced cucumber
1/4 cup sliced green onions
3 Tablespoon white wine vinegar
3
Tablespoon olive oil
2 Tablespoon chopped parsley
Arrange the asparagus on a salad plate. Combine tomatoes, beans,
cucumber and onion.
In a small bowl, combine the vinegar, oil and parsley; spoon over salad.
