Asparagus Stir Fry
Recipe
2 pounds fresh asparagus
1 pound fresh or frozen green beans
1 cup chopped pecans
1 cup grape or cherry tomatoes
1/2 tablespoon butter
salt and pepper to taste
1/2 tablespoon butter or margarine
1/2 tablespoon vegetable oil
Wash the asparagus, green beans
and grape tomatoes. Brake off the bottom end of the asparagus and cut off the
ends of the green beans. Cut asparagus and green beans into 1 to
1 1/2 inch pieces. Heat skillet, add oil, butter, asparagus and green bean.
Stir frequently until tender crisp about 3 to 4 minutes. Add the
pecans, cook 1 minutes, add tomatoes the last 2
minute. Serve hot.
