You can substitute dried craisins or dried currents for the raisins.
For fewer calories use low fat mayonnaise.

Broccoli Waldorf Salad

8 cups broccoli flowerets { that is the tops of the broccoli }
4 medium granny smith apples, sliced, cored, cut into bite size pieces
1 small red onion, sliced thinly
1 1/2 cups chopped smoked almond's
1/2 cup raisins
1 1/2 cups mayonnaise
1 tablespoon lemon juice


In a small bowl, combine onions, smoked almond's, raisins and mayonnaise. Set aside. To save time you can make the mayonnaise mixture the night before, omitting the onions.

In a large bowl, combine apples and lemon juice. Stir until apples are well coated with lemon juice, add apples and lemon juice to mayonnaise mixture. Refrigerate for 1 hour to blend flavors. Stir in broccoli. Serve in a pretty serving bowl. Serves 6 to 8. Easily doubled.
