Easy Zucchini Parmesan Recipe, what a great way to use up those home grown zucchinis. One - 2 or 3 pound zucchini cooking spray 1/4 cup seasoned parmesan cheese salt & pepper 1 cup fresh parmesan cheese - grated   Pre heat oven to the suggested temperature. Spray the baking dish with cooking spay. Wash the zucchini and slice into 1/2 inch thick slices. Layer slices in the baking dish, sprinkle with seasoned parmesan, salt & pepper. Cover with lid or foil and bake for 40 minutes, add the fresh grated parmesan over the top and bake the remaining 10 minutes or until the cheese is milted.
